Gajar ka halwa is a universal and most popular dessert not only in India but many other parts of the world. You will find this as a sweet dish in majority of the celebrations. I have made this multiple times before, and yet enjoy making it everytime.
1.5 kgs, red carrot, grated
6 tbsp, ghee
¾ tsp, cardamom powder
150 gms, khowa/mawa
2 cups, milk, warm
1 cup, sugar (you may increase/decrease as preferred)
A very generous big pinch of saffron
¼ cup, cashew nuts, coarsely crushed
¼ cup, raisins
Slivered pistachios and almonds for garnish
Silver paper for garnish
Mix the saffron in warm milk and keep it aside
In a heavy bottom pan, heat ghee. Add cardamom powder fry for 5 seconds.
Add grated carrot, increase the heat and sauté well on high for 4-5 minutes stirring well
Reduce the heat and let it cook in ghee for 5-10 minutes
Add milk with saffron, mix and let it cook till milk is reduced to half
Add khowa/mawa, raisins and cashews, mix well. Simmer till the milk is reduced completely
Add sugar and mix well till it dissolves completely
Increase the heat and sauté for another 3-4 minutes stirring continuously to avoid burning
Dish out in a bowl to be served.
Garnish with slivered pistachios, almonds and silver paper.
