Paneer is known as Chaman and it is combined with fresh fenugreek, and fresh spinach to make an exotic traditional vegetarian dish of Kashmir. Personally I am in love with fresh methi and use it frequently in my dishes in one or the other form. I usually have fresh methi always stocked in my fridge especially in winters when it is in season. Today I really wanted to cook something healthy, vegetarian and quick. All the ingredients were stocked, quickly gathered them all and started with them. So here is the authentic delicious dish with healthy leafy vegetables with richness of cream and goodness of paneer.
125 gms, fenugreek leaves(fresh)
125 gms, spinach
200 gms, paneer (cut in slices)
1 mediun onion finely chopped
1 tsp, caraway seeds(shajeera)
3-4 nos, cloves
5 nos, garlic cloves (finely chopped)
½ tsp, ginger, grated
2 green chilies, chopped (you may increase or decrease as preferred)
1 tsp, coriander powder
¼ tsp, turmeric
½ tsp, ginger powder
1 tsp, garam masala powder
1 tsp, sugar
Juice of half lemon
A generous pinch of asafetida
2 tbsp, fresh cream
3 tbsp, mustard oil
Melted butter for brushing
Salt as per taste
Water as required
Pinch of soda
Clean and wash both methi and spinach
Boil water in large pan. Once water starts boiling add methi and spinach along with pinch of soda.
Cook for a minute. Take out boiled leaves and immediately dip it ice cold water. After a minute, blend them to smooth puree.
Brush the pan with melted butter and fry paneer slices till light brown from both sides
Heat oil in a pan till smoky. Reduce the heat and add caraway seeds and cloves. Allow them to crackle.
Add chopped garlic and fry till light golden. Add onion, grated ginger and fry till onion turns slight brown.
Add green chilies, turmeric, asafoetida, coriander powder, ginger powder and mix well.
Add methi-spinach puree, 1 cup and cook for 2-3 minutes.
Add garam masala, sugar, salt and cook for another minute
Finally add fresh cream, lemon juice, fried paneer slices and cook for another minute
Dish them out, garnish with some fried paneer slices, cream and some dried Kashmiri chili.
Enjoy them with paratha, phulka or pulao of your choice.
If you prefer to cook no onion-no garlic version for this recipe, just skip both and proceed with the rest.
