Lentils cooked with raw mango and cabbage
In India, dal is very common dish that is prepared in almost every household. There are different ways of making dal, it is either cooked plain or with any vegetable or even meat , then tempered with few aromatic spices and ghee/oil. It is best enjoyed with hot steamed rice, pickle, chutney, papad. In My family, especially my kids relish dal along with rice and curd. Most of the time I prefer to cook lentils with some veggies like palak, methi, carrot, brinjal and so on… the reason behind doing this is, my son always avoid eating veggies as he loves non-vegetarian food. As their growing body needs the nutrition not only from non-vegetarian food, but also from vegetables and for me this is the best way I can feed him veggies as he enjoy eating dal. Raw mangoes are in season, so I cooked dal along with raw mango and cabbage This is savoured by my family not only when raw mangoes hit the market in summers, but whole year as I freeze raw mango slices every year and enjoy their delicacies whenever we want to. So here is how to make this simple, nutritious, tangy yummy raw mango –cabbage dal…..
1 cup, yellow lentil (toor/tur dal/split pegion pea)
1 cup, cabbage, finely chopped
1 nos, raw mango, medium, grated
1 nos, large tomato, finely chopped
1 to 2 nos, green chilies
½ tsp, turmeric powder
Salt as per taste
Water as required.
6 to 8 nos, garlic cloves, finely sliced
1 tsp, cumin seeds
A large pinch of asafoetida
¼ tsp, Kashmiri red chili powder
3 to 4 nos, button chilies
1½ tbsp, Ghee or Oil
Clean and wash the dal.
Boil it along with cabbage, raw mango, tomato, green chilies, turmeric powder, salt and enough water. Cook it till done.
Take it off the stove and adjust the consistency of the dal as preferred.
Place the dal again on heat and allow it simmer for 5 to 6 mins.
Heat oil or ghee.
Add sliced garlic and fry till the garlic starts getting light brown.
Add cumin seeds and button chilies, fry for few seconds.
Add asafoetida(hing), mix and take it off the stove. Immediately add red chili powder and mix.
Pour this tempering over the dal.
Enjoy with hot steamed rice, pickle, papad, raita, etc…
