It has been almost a month, I haven’t updated my space. The reason being so is..I was off to Makkah (Saudi Arabia) for a pilgrimage (Umrah) for few weeks. What peaceful days were they! I spent hours and hours gazing the beauty of Holy Kaa’ba , praying for everyone to be in peace and good health. May Almighty bless us all with happiness, success, bring peace and harmony into this world..Ameen!
Come summers and bring loads of gorgeous golden beauties along with you…yeah am talking about Mangoes!! You can see Mela of Mangoes here and there, everywhere in the market and aisle of supermarkets. Kids at home enjoying their summer holidays with plenty of activities, one of them is gobbling mangoes 😉 ….yeah, they are in love with mangoes especially the Alphonsos! So, why should I keep myself and my CnJ away from these golden beauties??
Let start the celebration of summers with mango delicacies, here is very easy, low fat mango lassi with saffron and dry fruit. This drink makes perfect low cal meal as breakfast or mid snacking full of fibres, calcium, energy and of-course guilt-free too. Take a glass full of this chilled delight and keep yourself healthy and energetic.
1/2 cup, mango pulp ( I have used fresh Alphonso mango pulp)
2tbsp, pistachios and almond, roughly chopped
1 cup, low fat yogurt (not too sour)
A pinch of saffron
1/2 cup + 2tbsp(warm) low fat milk
Sugar or honey as per taste ( I have used honey)
Few ice cubes
Pistachios and almonds
Strands of saffron
Soak saffron in 2 tbsp of warm milk and keep it aside for few minutes.
In a blender, blend dry fruits to coarse powder
Add mango pulp, yoghurt, milk, honey (or sugar),saffron soaked milk and blend it
Add ice cubes in serving glasses and pour the prepared lassi, garnish with pistachios, almonds and strands of saffron
you can also use mango chunks instead of mango pulp
