Mixed Vegetable Tahari

Mixed vegetable Tahari is a famous delectable North Indian delicacy of rice cooked along with vegetable and mild spices making it healthy comforting one pot meal. Vegetable tahari tastes divine when paired with raita and salad/pickle. Mixed vegetable tahari makes an ideal menu not only for you but your kids too.Mostly in winters, I always prefer to cook this easy recipe which makes warm hearty fulfilling nosh.
Oh! on weekends you are too lazy to cook, no worries! This vegetable tahari is a wonderful menu for weekends. Yes, when are in crunch of time or too slothful to cook on weekends, you can easily make this one pot meal in a pressure cooker too which will be ready in just 15-20 minutes.Honestly speaking I find myself too sluggish to cook on weekends ๐Ÿ˜‰ in that case this is the best soul soothing meal to cook and eat. So, here is the recipe of quick, easy and nutrition packed Mixed Vegetable tahariโ€ฆ

Ingredients:-
3 cups, rice, washed and soaked for 30 minutes
1 large onion, finely sliced
1 cup, cauliflower florets
1/3 cup, green peas, shelled
1/4 cup carrot, cut in 1inch long pieces
1/4 cup french beans, cut in 1 inch pieces
1 large potatoes, cut in 1 inch cubes
1 teaspoon, cumin seeds
6-8 black peppercorns
6-8 cloves
2, cinnamon stick of 1 inch
1 bay leaf
3/4 teaspoon turmeric powder
1&1/2 teaspoon coriander powder
1/4 cup, coriander leaves, finely chopped
Juice of one lemon
5 tablespoon, mustard oil ( you may use refined oil if you prefer)
Salt to taste
Grind to coarse paste:
3-4 green chilies ( you may adjust accordingly)
8 garlic cloves
1 inch pieces of ginger

Method:-
In a heavy bottom pan, heat mustard oil till smoky.
Lower down the heat to minimum and add cumin seeds, bay leaf, cinnamon, black peppercorn, and cloves, fry for few seconds
Add onions and fry until soft and pink
Add potatoes and fry well on high heat for 3-4 minutes
Add cauliflower, carrot, beans and peas, fry for another 2 minutes
Add chili-ginger-garlic paste, turmeric, coriander powder, chopped coriander and sautรฉ well for 2 minutes. Cover and cook for 3-4 minutes.
Add rice, 6 cups of water, salt and lemon juice and mix.
Cook until 90%water dries up. Cover and simmer until done
Delicious vegetable Tahari is ready served with raita and salad.

    Hi,
    M regular follower of your page, have tried many of your recipes which turned our yummy. Recently I tried zafrani pulao I even added green chilly ,is their any other way to make it spicy.
    Any tips to make rice fluffy.
    Can you share recipe of veg dum biryani.

      To make that pulao spic, you can as much green chilies finely chopped ๐Ÿ™‚
      The soaking of rice for minimum 30 minutes amount of water used for cooking the rice is very important. For 1 cup of basmati rice you need to add 1&1/2 cup of water only if you want it to be fluffy and separated.Also soak it for at least 30 minutes
