Chatpate Pitor is a traditional Rajasthani snack of Chickpea dumplings tempered with spices and seasonings. Chatpate Pitor, is very easy to cook, although, it needs a little technique to get the perfect pitor. It is usually served as a snack for breakfast or teatime, it can be relished on its own or you can also serve it with mint coriander chutney. Chatpate Pitor makes a great snack for a change than a usual one we serve to our guests. For making Pitor
1½ cup, besan(chickpea flour)
½ cup, curd, whisked well
2½ cups, water
¾ teaspoon, crushed green chili
1 teaspoon, ginger, grated
1/2 teaspoon, haldi
Salt to taste
1 tablespoon oil
1 teaspoon, cumin seeds
A pinch of heeng
1&1/2 tablespoon, oil
1 teaspoon, cumin seeds
1 teaspoon, mustard seeds
2-3 green chilies slit
lemon juice as per the requirement
Chaat masala as required
Chopped green coriander leaves for garnish
Some Mint-Coriander chutney as required
In a large bowl, combine besan, yogurt, water, ginger, green chilies and mix well to form lump free batter
In a deep pan or kadhai,
Heat oil, add cumin seeds and allow it to crackle
Add heeng and mix.
Increase the heat to high and carefully add the besan batter and whisk it continuously to avoid lump formation
Cook the batter until it gets thick and starts leaving the pan.
Immediately, transfer the batter in a greased plate or thali and level it up with the help of a flat spoon.
Cool, the prepared pitor for 45 mins or until it is ready to be cut into pieces.
Now, cut the pitor depending upon the shape and size you prefer to make. I had cut them in bite sized pieces.
In a pan, heat oil. Once the oil is hot, add mustard seeds and allow it to crackle
Add cumin seeds and fry for few seconds
Add green chilies slit and fry for few seconds
Add pitor pieces and toss very well until brown and crisp
Check for salt, add chaat masala and lemon juice, toss well
Dish out and garnish with fresh coriander leaves
Chatpate pitor is ready to be served, relish it on its own or serve them with green chutney.
