Berries have special corner in my heart, they are so appealing, those gorgeous colorful delicate gems, I just can’t resist grabbing them. My freezer has a special compartment for the berries to rest their peacefully until I put my hands on them. I see them in the market and they have to make their way in my cart. They are versatile, you munch them on their own or form some amazing creations like desserts, savories, drinks, smoothies and so on. This time berries made their way to my drink- Macerated Berry Ginger Spritzer. As told, freezer is always stocked with almost all types of berries, a mix of all were used to make the spritzer. If you desire to use a mix or any one of your choice, it’s absolutely your call, the spritzer will be as delicious as this mixed one. Mix of berries when combines with ginger and lemon gives divine punch uplifting its zest to refresh all your senses to beat the heat and tiredness in this scorching weather. Beautiful mixed berries lead me make delicious mixed berries syrup and dessert Lemon grass oats-almond pudding with macerated berries. Mixed berries syrupwere topped on pancakes, swirled into cheese cakes and ice creams. Now, let’s quickly go through how to make this beautiful thirst quencher.
2 cups, mixed berries (cranberries, blueberries, raspberries, blackberries) fresh/frozen
½ cup water
¼ cup, brown sugar (you may add more)
1 teaspoon grated ginger
1 teaspoon lemon juice
Few mint leaves
Chilled Bottle of Club soda(sparkling water)
In a large bowl, combine berries, ginger, lemon juice. water and sugar.
Mash it slightly with the muddler or back of the spoon
Cover and keep it aside for 30-45 minutes. Stir occasionally.
If you prefer the berries not to be chunky, you can muddle it further to make it little thick saucy, the way I did.
Fill 1/4 of the serving glasses with of macerated berries
Add mint leaves and ice cubes
Add chilled club soda and serve immediately
Stir, sip and enjoy!!!
