Lemon Raspberry Pound Cake
Pound cakes are classic traditional cakes in which the four main ingredients, viz. flour, butter, sugar and eggs follow the ratio of 1:1:1:1. They can be made either plain vanilla or chocolate pound or you can also flavor them with nuts, berries or fruits of your choice. They are very moist, soft , rich and buttery to the deepest crust of it. Pound cakes have a very beautiful golden brown crust. If you wish you can glaze them or sprinkle some icing sugar or enjoy them plain. This goes perfect for your breakfast or evening tea.
All ingredients at room temperature unless specified.
1½ cup(175 gms) + extra for flouring and coating the berries, all purpose flour
¾ cup(175gms), granulated sugar
175 gms, unsalted butter
3 nos, eggs
1/3 cup, cream (I have used Amul Cream)
Juice of 1 lemon
1 tsp, lemon zest
½ tsp, cinnamon powder
1 tsp, baking powder
¼ tsp, baking soda
¼ tsp, salt
1½ tsp, vanilla essence
1 cup, raspberries, fresh or frozen
Pre heat the oven at 170 degrees.
Grease and flour a 9inch ring mould or cake pan
Sift together flour, baking soda, baking powder, cinnamon powder and salt.
Coat the berries with 2 tbsp of flour(This will avoid the sinking of berries at the bottom)
Beat together, butter and sugar till pale creamy and fluffy(for4-5 minutes)
Add eggs, one at a time. Beat well after each addition.
